1️⃣ Cook the beans: Rinse dried black beans and soak overnight (or quick soak: boil 2 mins, let sit 1 hr). Drain, add fresh water, and simmer until soft (about 1½–2 hrs). Salt to taste.
2️⃣ Fry & mash: Heat oil in a skillet, add cooked beans with a little cooking liquid, and mash until creamy but still textured.
3️⃣ Top it off: Garnish with chopped chives or queso fresco.
