Garlic Lemon Herb Chicken π
Ingredients:
-2 lbs chicken thighs, boneless and skinless
-1 tbs olive oil
-2 tsp garlic powder
-2 tsp onion powder
-2 tsp smoked paprika
-2 tsp lemon pepper seasoning
-1 tsp dried thyme
-1 tsp dried parsley
Instructions:
-add all ingredients into a large bowl and mix well
-marinate in the fridge for 30 min up to overnight (optional)
-preheat oven to 400F and place chicken on wire rack over a baking sheet
-roast for about 30 min until internal temp is 165F
-rest for 10 min before cutting into bite-sized pieces
Roasted Sweet Potatoes π
Ingredients:
-3 medium-large sweet potatoes
-1 tbs olive oil
-2 tsp garlic powder
-2 tsp onion powder
-2 tsp smoked paprika
-2 tsp lemon pepper seasoning
Instructions:
-wash, dry, and cut sweet potatoes into quarter-inch cubes and add into a large bowl with the rest of the ingredients; mix well and spread onto a baking sheet lined with parchment paper
-preheat oven to 400F and roast potatoes for about 30 min until tender
Garlic Green Beans π«
Ingredients:
-1 lb green beans
-3 garlic cloves, minced
-1 tbs olive oil
-1/2 tsp salt
-1/2 tsp pepper
Instructions:
-bring a medium pot of water to a boil
-add green beans and allow to heat for 3 min
-remove, strain, dry, and cut beans in half
-heat a pan to medium-high heat, add oil, and add beans and garlic
-season with salt and pepper; saute for 2-3 min
